German Style Potato Salad

Need an epic side for a BBQ or delicious dish for a picnic? Try out my awesome recipe for a German style potato salad – you won’t be disappointed! The fresh flavour of the dill and tangy-ness of the mustard and pickles really make this dish pop! We went to the St Augustine Farmer’s Market this weekend to pick up some of our favourite pickles and ginger + carrot kraut from Olive My Pickle – SO delicious! Not only are their products homemade and delicious, but the brine is full of probiotics and makes for a healthy boost, so drink up! Serve the potato salad with some good old kraut and BBQ’d BratwΓΌrst and you’re onto a winner!

German Style Potato Salad

Serves 4-6olive my pickle

1.5 kg small red potatoes, skin on, quartered

4 large free-range eggs, hard boiled and chopped

1/4 red onion, finely chopped

2 large dill pickles, chopped small

1 large handful fresh dill, finely chopped

*Tip: there is a lot of flavour in the dill stalks, chop them up too!

3 T Mayonnaise

2 T Whole grain / delicatessen style / Dijon mustard

Salt and pepper to taste

Method:

  • Put the cubed potatoes in a large saucepan and cover with cold water. Add 1 tablespoon of salt. Bring to a gentle boil and cook until the potatoes are tender, about 20 minutes. Drain and let the potatoes cool completely.
  • In a large bowl, mix the potatoes and remaining ingredients, stir through until everything is mixed thoroughly and the potatoes are covered evenly
  • Season to taste with salt and pepper
  • Serve with your favourite kraut and grilled wΓΌrst for a delicious German feast!
