Vegan Peanut Butter Banana Squares

These scrumptious little treats make the perfect healthy any-time-of-day snack, packed with energy and goodness! Chia seed also adds an extra dose of anti-oxidant and Omega 3. Inspired by my previous chocolate tart recipe, using the same base, I developed these vegan peanut butter banana squares. They’re easy to make and can be kept frozen to have on hand whenever you feel a naughty little craving coming along.


Makes 12-16 squares

2 cups pitted dates

1 cup shredded coconut

1 small handful toasted macadamia nuts, finely chopped

3 T chia seeds

9 T water

4 T homemade peanut butter

2 fresh bananas

Toasted coconut shavings for garnish


  • Soak your pitted dates in hot water for about 20 mins
  • Combine the chia seeds with the measured water and allow to swell and thicken
  • Drain the dates and gently squeeze out any excess water
  • In a food processor, blend 1 cup of the dates, the macadamia nuts and shredded coconut until well combined
  • Line a square brownie tin with baking paper
  • Press the date mixture evenly into the bottom of the tin. Not up the sides
  • Blend the peanut butter, chia seed mixture and the remaining cup of dates together until smooth. The chia seeds will mostly remain whole. Add a dash of water if the mixture is too dry
  • Pour this mixture into the tin and spread evenly over the base
  • Thinly slice the bananas and lay them evenly over the mixture
  • You can put this straight into the freezer to help it set and leave it there for when you need it
  • To serve, remove it from the tin (with the paper) and allow to defrost a little before cutting on a chopping board so you don’t scratch the pan
  • Cut into squares and serve with the toasted coconut shavings
  • Yum! Super easy
